Fr. Paul’s Easy Tiramisu

1 pkg. ladyfingers
Cheese Filling
16 oz. Cream Cheese
8 oz. Ricotta Cheese
4oz. heavy whipping cream
1 tsp. vanilla
2 Tbsp. sugar
Amaretto or Frangelico to flavor (an ounce or so – optional)

Coffee Syrup
1 c very strong coffee or espresso
½ c sugar
1 tsp. vanilla
1 Tbsp. ground cinnamon
1 oz. Amaretto or Frangelico (optional)

Coco Powder
8oz. Heavy Cream – whipped

Place ingredients for Coffee Syrup in heavy bottomed saucepan. Simmer ingredients until reduced by about a third.  If too thick, add coffee.  It too thin, keep simmering or add a few tablespoons or sugar.  Set aside to cool.

For cheese filling, use electric mixer to slowly incorporate one ingredient at a time until smooth.  In a glass loaf pan assemble the following:

Briefly dip ladyfingers in ½ the coffee syrup. Layer them on the bottom of the pan.  Pour in half the cheese mixture and spread evenly. Pour ½ of the remaining syrup. Lightly powder with cocoa.  Repeat the process. Pour all remaining coffee syrup slowly over the top. Powder with coco.

Refrigerate at least 2 –3 hours until it sets.

Slice, lift out carefully, and serve on a plate with some whipped cream.  Shave chocolate over the top or dust with cocoa powder it if you wish.
