Fr. Joe's Sauce
Makes 1 big pot of sauce
4 cans tomato puree
2 cans whole tomatoes
2 cans crushed tomatoes
3 cans tomato paste
1 sm. can mushrooms
2 lbs. ground beef
1 lb. Italian sausage
1/2 lb. pork sausage
1 green pepper chopped
1 red pepper chopped
1 yellow pepper
1 lg. Spanish onion
1 lg. head of garlic
Oregano, basil, red pepper flake, black pepper to taste.
1 Tsp. sugar
Brown and drain all meats. Add all ingredients to pot and simmer at least 3 hours.
A tip from Fr. Joe: If you don’t like a sweet sauce, do not add the sugar. Instead when the sauce is almost cooked, add 1 Tsp. baking soda.
A tip from the producer: If you don’t like a sweet sauce, or the
idea of using baking soda, use about 6 whole cloves. This will cut
the acid caused by the tomatoes.
