Baked Fish and Vegetables
2 or more pieces of Haddock or other mild fish filets
1 large green peppers, cut in rounds
1 large onion, cut in rounds
1 or 2 tomatoes, cut in slices
1 small bottle of Ranch dressing (can use Fat Free – can also use Bleu Cheese,
Thousand Island or what ever is your favorite)
Juice of ˝ a lemon
Put fish in pan, cover with onions, tomatoes and green peppers; sprinkle with lemon juice and cover with dressing. Cover with foil and bake at 350* for 35 – 40 minutes.
Pineapple Cream Pie
1 Keebler Graham Cracker Crust
1 8oz. tub Cool Whip
1 14oz. can Eagle brand condensed milk
Rind of 1 lemon
1/3 cup lemon juice
1 large can crushed pineapple, drained
Whip milk and lemon juice; fold in cool whip and 2/3 of the pineapple. Pour into pie shell; sprinkle with remaining pineapple. Chill at least 3 hours.
Other fruits like strawberries, apricots and banana also make a delicious pie. Almost all the ingredients in this pie are available in low or no fat form.
