Pork Goulash

Fry 3 slices of bacon, and remove from pan.  In the bacon fat place 2 ½ lbs. pork steaks cut in cubes, and brown over high heat, add 2 Tbsp. of oil.  While browning sprinkle with 1 Tbsp. of flour, 1 tsp. brown sugar, salt and pepper to taste, 1 tsp. rosemary, ½ tsp. thyme, ¼ tsp. sage, 1 clove chopped garlic and 1 bay leaf.

Once the meat is brown on all sides, add 1½ large chopped onions.  Allow onions to brown and cook down; add cooked bacon. Stir often. Add one large can of crushed tomatoes.  If needed add a small can of tomato sauce.  Simmer until meat is cooked.

Boil out noodles and drain.  Mix together noodles and meat sauce.  Serve immediately.  If need be, place in a casserole dish and warm in the oven, to serve at a later time.  Adding cheese over the top can add a delicious twist to this dish.

 

The Pastor’s Oatmeal Raisin Cookies

1 C butter
1 C brown sugar
½ C white sugar
2 eggs
1 tsp. vanilla
1 ½ C flour
1 tsp. baking soda
¼ tsp. cinnamon
3 C oatmeal
1 ¼ C raisins

Combine butter and sugars and beat until smooth.  Add eggs, vanilla and mix thoroughly.  Add all dry ingredients and mix well.  Drop by rounded teaspoon on a greased cookie sheet.  Pre-heat oven to 335* and bake for 12 – 15 minutes.  Makes 3 dozen.
